Types of Beans

  • Kidney Beans

Soaking beans before cooking with shorten the cooking time. Before soaking beans, remove any stones and cracked or broken beans.

Long Soak

Pour one bag of beans beans into a large pot. Cover beans with cold water. Water should cover beans by 2 inches. Soak for six hours or overnight at room temperature.

Short Soak 

Pour one bag of beans into a large pot. Cover beans with cold water. Water should cover beans by 2 inches. Bring to a boil for two minutes. Turn off stove and soak beans at room temperature for one hour.

Cooking with Soaked Beans

Drain soaked beans and add fresh water to cover beans by one inch. Bring pot to a boil on high heat, then
lower to a simmer. Cover and cook for 1-2 hours or until tender. Season with salt, pepper, and other herbs
and spices.
