Orange Pork Chops

Ingredients:

2 pork chops
1 Tablespoon vegetable oil
1 sweet potato, washed and peeled
1/2 orange, washed and sliced
pinch of cinnamon
pinch of black pepper

Directions:

  1. Preheat oven to 350 degrees.
  2. In a medium size skillet over medium heat, brown pork chops in oil.
  3. Cut sweet potato into 1/2-inch slices.
  4. Place meat and sweet potato slices in a baking dish and top with orange slices; season with black pepper and cinnamon.
  5. Cover and bake for 1 hour until meat is tender.
