Contained culture is a common way of growing individual oysters for the half shell market. This method allows for the wind and wave action to chip and shape the oyster shells, training them to have a deeper cup with more oyster meat. Individual oysters of about 1-inch diameter are transferred to bags in floating or submerged cages or suspended on long lines that keep the oysters out of the bottom sediments. Management of these containers is different depending on the gear type, but generally the oysters are allowed to go through wet and dry cycles to reduce biofouling on the gear and to tumble the oysters. As they grow, the oysters are tumbled and sorted by size then transferred to bags with progressively larger mesh sizes to reduce biofouling and increase water flow. This process improves the growth rates, survival, and uniformity of the oysters for high end markets.
