Directions:
- Preheat the oven to 350 degrees.
- Place grated zucchini in a doubled paper towel or use a clean cloth, to squeeze excess water out. Place in a medium bowl.
- Add grated apple to the zucchini in the bowl.
- Add the cinnamon, egg, and flour. Stir mixture thoroughly.
- Lightly coat a baking sheet with non-stick cooking spray
- Scoop mixture with ¼ cup measure to make 6 round even fritters, and place on the baking sheet.
- Bake for 20-25 minutes or until golden brown on the edges and cooked through.
- Remove from the oven. Let cool for a few minutes before serving.
