Veggie Bagel Smiles

Ingredients:

1 whole-wheat bagel, sliced in half
2 Tablespoons low-fat vegetable cream cheese
2 slices low-fat cheddar cheese
½  red bell pepper, washed and sliced 
1 bunch broccoli florets, washed
½ cucumber, washed and sliced 
½ carrot, washed and shredded
2 grape tomatoes, washed and cut in half

Directions:

  1. Spread 1 tablespoon of low-fat cream cheese on each ½ of a bagel
  2. Arrange cheese, red pepper, broccoli, cucumber, grape tomato, and shredded carrot on each bagel in a smiley face.
