Rice Salad

Servings: 6

Ingredients:

2 cup cooked brown rice, chilled
½ cup frozen peas, thawed, or canned green peas, rinsed and drained
1 stalk celery, washed and diced
½ bell pepper washed and diced
¼ cup raisins
2 Tablespoons mayonnaise
2 Tablespoons low-fat French dressing

Directions:

  1. Mix rice, vegetables, and raisins in a medium sized bowl.
  2. Mix mayonnaise and dressing in a small bowl. Stir in rice and vegetable mixture.
  3. Refrigerate to chill before serving.
