Okra Creole

Servings: 4

Ingredients:

1 green pepper, chopped
1 medium onion, chopped
3 Tablespoons vegetable oil
2 cups corn, frozen or canned
2 cups frozen okra
1 (15 ounce) can diced tomatoes
1 Tablespoon tomato paste
1/2 teaspoon paprika
1/2 teaspoon Italian seasoning
Salt and pepper to taste
1/2 teaspoon hot pepper sauce (optional)

Directions:

  1. Heat oil in a large skillet.
  2. Cook green pepper and onion until soft.
  3. Add corn and okra. Cover over medium heat for about 10 minutes. Stir occasionally.
  4. Stir in the tomatoes, tomato paste, Italian seasoning, salt and pepper.
  5. Cover and simmer for 3-5 minutes. Stir occasionally.
