Lasagna Roll Ups

Servings: 10

Ingredients:

½ package of  lasagna noodles (10 pieces)
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1 teaspoon Italian seasoning
1 1/2 cups frozen spinach, thawed
1/4 cup parmesan cheese, grated
1/2  cup low-fat, cottage cheese
3/4 cup ricotta cheese
1/2 cup cup low-fat mozzarella cheese, grated
2 1/2 cups spaghetti sauce

Directions:

  1.  Preheat oven to 375 degrees. 
  2.  Boil noodles according to package, drain, and set aside.
  3. Transfer thawed spinach to a colander to drain and squeeze out excess moisture. Set aside.
  4.  In a medium sized bowl, combine cottage, ricotta, parmesan, and 1 Tbsp of mozzarella cheese.
  5. Stir in spinach, Italian seasoning, garlic powder, and onion powder.
  6.  Pour 1/2 cup of spaghetti sauce in baking pan or casserole dish to cover the bottom.
  7. On a flat surface, lay noodles out one at a time.
  8. Spread each boiled lasagna noodle with cheese mixture along full length, and then roll it up (about 2 Tbsp). 
  9. Place rolled noodles in the baking pan/casserole dish, seams down and sides touching.
  10. Pour remaining sauce over rolled up noodles and top with the remaining mozzarella cheese. 
  11.  Bake in the oven until cheese is melted and sauce is bubbly - about 25 minutes.
