Summer is the season for spending time outdoors.  Whether you prefer  backyard get-togethers or beach side bonfires, there is always something to do or someplace to go.  We tend to squeeze a lot of activity into our busy schedules and often overlook meal planning. Don’t let the hot weather and bustling schedules derail your dinner plans.  Simply add some quick and easy meals to your summer meals rotation.

Fresh Fruits and Veggies - Summer is the season for fresh fruits and vegetables.  Nothing tastes better than ripe, in season, freshly picked produce.  Stop by your local farm stand, farmers markets, or grocer to grab your favorites and add them to your summer meals.

Quick and Easy Snacks - Not ready for a full meal? No problem! Start your day with a cool Mango Smoothie. For a light afternoon snack try a Cantaloupe Melon Kabob. or top off your night with a bit of Peach a la Mode

Simple Recipes - When planning your summer meal rotation, visit EatSmart Recipes and look for “one pan meals” or “30 minutes or less” recipes. Consider pasta dishes like the tangy Tomato Cucumber Salad or  Crookneck Squash Pasta Salad.  If you want to wrap dinner up quickly, check out the Tasty Tuna Lettuce Wraps.  For a quick clean-up, try  Roasted Tomatoes with Herbs or Summer Italian Vegetables. More quick options include tacos, garden salads, and even veggie pizzas.

Whatever you decide, make it fresh, light, and quick!
