Rainbow Salad

Ingredients:

1/2 box whole grain pasta, cooked
1/2 cup reduced-fat salad dressing 
Choose fruits or vegetables from three or more different colors to equal 3 cups of veggies.
Some suggestions are listed below:

 

Red:  Red Pepper, Tomato, Strawberry, Apple, Raspberry

Yellow/Orange: Yellow or Orange Pepper, Squash, Cantaloupe, Mango

Green: Lettuce, Spinach, Carrot, Broccoli, Green Pepper, Pear

Purple: Purple cabbage, Beets, Eggplant (uncooked), Blueberries

 

 

 

Directions:

  1. Place pasta in a large bowl.
  2. Choose at least one fruit or vegetable from each list to add to the salad.
  3. Add reduced-fat dressing.
  4. Mix and serve.
