Directions:
- Preheat the oven to 450 degrees F.
- Cut squash lengthwise and remove the seeds. Then, cut squash into ½ inch slices lengthwise.
- Toss the squash and red onion, if using, with the oil. Add salt and pepper to taste.
- Roast on a rimmed sheet pan for 30 minutes.
- Top with pumpkin seeds or chopped nuts.
