  • Making Apple, Fruit & Ice-Style Wines (Video)
Dr. Joseph Fiola's, Maryland's Viticulture and Small Fruit Specialist, delivers a complete instructional presentation of a simple process to make excellent quality wines on a hobbyist or commercial scale.
During his research, they developed Cryo-Concentration process which streamlines juicing the fruit, while increasing the natural sugar content. He shows how to use an in-expensive bladder press which yields a clear juice instead of the "cider-like" juice resulting from the usual maceration process. He explains how to mix fruit varieties and which ones to mix to make different flavors and wine styles. Dr. Fiola's team won an America Wine Society Bronze medal for their Dry-White Burgundy style wine using this process. You can make money with this winemaking process. Source: QACTV
