Sunshine Carrots

Servings: 8

Ingredients:

5-6 carrots, washed, peeled and sliced (or 1 bag baby carrots)
1/3 cup orange or apple juice (or vegetable broth)
1/4 teaspoon seasoning (cinnamon or rosemary)

Directions:

  1. Add all ingredients to a saucepan.
  2. Cover and cook over medium heat. 
  3. Stir occasionally and cook until tender, about 15 minutes.

Notes & Tips:

For a sweeter dish, use apple or orange juice and cinnamon.  For a more savory dish, use vegetable broth and rosemary.
