Salmon Salad

Servings: 4

Ingredients:

2 (7.5 ounce) cans of salmon (or 2 cups cooked flakes salmon)
1 red or green bell pepper, diced
1 cucumber peeled, seeded, and diced
½ cup onions, chopped
3 Tablespoons mayonnaise, or enough to moisten
¼ teaspoon cayenne pepper
Salt and pepper to taste
½ lemon, juiced

Directions:

1. In a large bowl, combine bell pepper, cucumber, onion, and mayonnaise.
2. Add seasonings and stir to combine.
3. Add salmon and lemon juice.
4. Toss lightly to combine.
5. Serve over lettuce or as a sandwich.
