Big Game Fish Handling Program
Ocean City Convention Center Conference Room
11:00am - Handling Histamine For Health - Tom Rippen will give a presentation on the importance of proper fish handling for offshore big game species. Many anglers do no know that bacteria build up fast in poorly handled fish and can lead to scombrotoxin or histamine food poisoning. All species of tuna, wahoo, dolphin, marlin, mackerels, bluefish and amberjack are potential histamine formers. This program will assist anglers and captains to head off any potential health problems from deck to plate.
11:30am - Fish Care = Customer Care - Captain Mark Hoos, Charter Boat Marli - Capt. Mark will discuss how to properly handle fish on-board, at sea, for quality control assurance.
11:45am - Fish Cutting Demo – Stanley Henson, OC Sunset Marina – Stanley will exhibit a fish cleaning demonstration and talk about poorly handled fish that reach the dock.
12:00pm - Dockside Survey Results - John Ewart, Univ. of Delaware – John will summarize the current results from an on-going dockside survey of fish handling by anglers who fish offshore.
